I wanted something light and fresh today so I thought I'd give this a try.
Ingredients
Sauce
1/4 cup fat-free plain Greek yogurt
1/2 oz mashed avocado
1 tsp lime juice
1/8 tsp ground cumin
Bowl
2 cups roughly chopped cauliflower
1 cup broccoli florets
1/8 tsp salt
4 oz raw large shrimp, peeled, tails removed, deveined
1/8 tsp ground cumin
1/8 tsp chili powder
1/4 cup canned black beans, drained and rinsed
1/4 cup chopped mango
2 Tbsp chopped fresh cilantro
I used my food processor to pulse the cauliflower. I think it might have been a little too finely processed but it was still okay.
Place all sauce ingredients in a bowl and blend.
I also used the small bowl attachment on my food processor to make the sauce. I was insanely frustrated because my avocado wasn't really ripe enough and I couldn't get it to blend in, even with a mortar and pestle!
Spray a large skillet with olive oil spray and put it on medium high heat. Add broccoli and 1/4 cup water. Cover and cook for 3 minutes or until the broccoli is tender and the water has evaporated.
Add the cauliflower rice to the skillet. Cook and stir until hot and softened, 2-3 min. Transfer contents to a medium large bowl. Stir in salt, and cover to keep warm.
Remove skillet from heat; clean, if needed. Re-spray and bring to medium heat. Add shrimp, and season with cumin and chili powder. Cook and stir for about 4 min, until cooked through.
Top veggies with shrimp, beans, and mango, cilantro, and sauce.
Makes one 4 pt serving.
What I changed ~ a lot.
I more than doubled the amount of spices in here and doubled the mango as well as it still seemed a little too dry and bland for me. Of course my sauce was kind of a disaster so who knows if that would be necessary.
I love mango and it is free so it wasn't a bad thing to bulk it up and add more flavor, color and texture.
I think this was overall good, not great but good. I would also definitely cook the cauliflower longer because it really still had a strong cauliflower taste.
So with some changes I think this recipe has a lot of potential.
